Abstract:

Purpose of review: This article reviews the subject of juice preservation, evaluating developments in this area published in the past 5 years leading up to the review.

Findings: Scientifically speaking, PEF is a mature technology that has still several hurdles to overcome before being widely deployed in this specific food field.

Directions for future research: Possible research paths include among others, investigating the origins of the actual poor PEF acceptance and designing ways to address such subjects. It also would be valuable developing an unified core theory compatible with the current knowledge that, concurrently allow for the integration of unusual behaviours.
